Small, spherical, deep-fried pastry pockets with a savory filling are called mini kachoris. They are a common snack in Indian cooking, especially in the country’s north. The wheat flour pastry used to make miniature kachoris is usually deep-fried to give it a crispy quality. Although the filling within the little kachoris varies, it usually consists of a blend of peas or lentils that have been seasoned, or occasionally a blend of mashed potatoes and spices. Typically, a mixture of spices including cumin, coriander, ginger, and chili powder are used to flavor the filling. Mini kachoris go well with a variety of chutneys, including tamarind, coriander, and mint. They are a common street meal in Rajasthan and are commonly eaten as a snack or appetizer.
